The Sommelier’s Notes
This wine is a magnificent blend of power and finesse, reflecting its unique high-altitude, volcanic terroir:
- Appearance: Deep, intense ruby, developing into a handsome garnet.
- Aroma: Succulent and poised, with layers of cherry, damson, sweet liquorice, tobacco leaf, and a distinct mineral, almost tarry, undertone.
- Taste: Full and concentrated on the palate, yet beautifully balanced by a lively acidity. The dense, fine-grained tannins provide superb definition, wrapping around the dark fruit and spice core, leading to an elegant and incredibly long finish.
Food Pairing & Decanting
A wine of this calibre should be served with equally robust and classic dishes. We recommend decanting this bottle for 2-3 hours to soften the tannins and release its full aromatic potential. Serve at 18°C.
