Château Simard – Saint-Émilion Grand Cru – Red – 2011:
Château Simard: A Grand Cru of Purity and Finesse from Saint-Émilion
Château Simard is a jewel in the crown of the Vauthier family, proprietors of the esteemed Premier Grand Cru Classé A, Château Ausone. Situated on the southern slopes of Saint-Émilion, this estate delivers a wine famed for its focus on fruit purity, freshness, and approachability. The traditional vinification, favouring concrete and stainless steel with only gentle barrel ageing, allows the dominant Merlot and Cabernet Franc to express the classic elegance of the Right Bank terroir.
Sommelier’s Tasting Notes (Classic Vintage)
- **Appearance:** A rich, deep garnet hue.
- **Aroma:** Elegant and focused, with primary aromas of dark berries (mulberry, blackcurrant) leading into nuanced secondary notes of cedar, leather, and a delicate floral lift.
- **Taste:** The palate is medium to full-bodied, characterised by a wonderful, silky texture. It displays generous fruit perfectly balanced by soft, integrated tannins and a refreshing acidity. This Grand Cru is smooth, yet structured, with a satisfying length.
Food Pairing & Service
To fully appreciate its complexity, allow the wine to breathe for a short time before serving. Best enjoyed at 17°C, Simard is a magnificent accompaniment to traditional British Sunday roasts and sophisticated game dishes. A testament to the Vauthier quality, it offers immediate pleasure with the gravitas of a top Bordeaux.
