Dominio de Pingus – Pingus – Ribera del Duero – Red – 2022:
Dominio de Pingus – BIO: Ribera del Duero’s Icon
Hailing from the prestigious Ribera del Duero, the Dominio de Pingus – BIO is a benchmark for Spanish fine wine. Created by Peter Sisseck, this biodynamically farmed, low-production Tempranillo (Tinto Fino) is globally recognised as a ‘cult wine’ and a serious investment asset. It perfectly marries the raw, brooding power of old Spanish vines with a refined, almost Médoc-like structure and purity.
Tasting Notes (Reference Vintage)
- Colour: A deep, inky purple.
- Nose: Highly complex, offering a powerful blend of intense dark berries, plum, liquorice, cedar, and smoky mineral notes. Hints of violet and tea unfurl with air.
- Palate: Full-bodied and concentrated. It possesses a remarkable velvety texture, driven by super-fine tannins. The wine is both muscular and graceful, showcasing a brilliant balance of rich fruit and fresh acidity.
- Finish: Long, elegant, and persistent, leaving a lasting impression of pure Tinto Fino fruit and spice.
Food & Service Recommendations
This is a wine for special occasions and requires careful handling. We recommend decanting this wine for 3+ hours. Serve at 17°C.
- Pairing: Traditional Sunday Roast Beef with all the trimmings, Venison Loin with Juniper, Slow-Cooked Oxtail Stew, or a selection of aged Spanish cheeses.
- Investment Potential: Due to its limited production and critical acclaim, Pingus offers outstanding long-term investment value.
